Ingredients
- 3 medium-sized aubergines
- 500gr mincemeat preferably 250gr pork and 250gr beef
- 1 large onion
- Half a tin of chopped tomatoes
- 1 full tablespoon of tomato paste
- 1/4 glass HORRAON Ultra Premium Extra Virgin Olive Oil
- Salt
- Pepper
- 1lt milk
- 4 full tablespoons flour
- 1 glass HORRAON Ultra Premium Extra Virgin Olive Oil

Instructions
- Cut the aubergines in half and take out the pulp. Rub the aubergines with olive oil and put them in an oven dish. Cut the pulp into small pieces.
- Firstly we put the aubergines in the oven until they get soft
- In a small casserole, we cook the mincemeat with 1/4 of a glass HORRAON Ultra Premium Extra Virgin Olive Oil the pulp of the aubergines, and when they are half cooked add the tomato paste and the chopped tomatoes and cover it with water.
- Add salt and pepper and live it to boil for about 20 minutes until the water is almost absorbed,
- At the same time check the aubergines in the oven and when they are ready to take the dish out sprinkle grated cheese on the bottom of the aubergines and fill them with the mincemeat mixture.
Bechamel Sauce
- In a deep pan heat the HORRAON Ultra Premium Extra Virgin Olive Oil and add the flour stirring it with a whisk until you get a smooth result. Add the milk slowly slowly stirring it continuously until it becomes thick.
- Add salt.
- When the sauce is ready put it on top of the aubergines with the mincemeat and back in the oven for about 20 minutes until the sauce gets a nice light brownish color.
- Take it out and leave it to stand for about 10 minutes
