Ingredients

  • 10 Clementines (Not waxed)
  • 2.5 Teacups of Water
  • 1 Teacup of Sugar
  • 2 Tablespoons of Lemon Juice

Instructions

  1. Half fill with water a large pot and put it to boil
  2. While the water is getting to the boiling stage, wash well the clementines.
  3. Remove any stacks and leaves if they exist
  4. When the water comes to boil add the clementines. Whole as they are.
  5. Let them boil for 5 to 7 minutes.
  6. Remove each clementine with a skimmer and place them in a bowl with cold water.
  7. Add more cold water if necessary to cool them nicely.
  8. Use a cutting board and start cutting them in thin slices. Don't worry if they are not evenly cut.
  9. When you complete the slicing, place them in a pot with a thick bottom and add the 2.5 teacups of water and put them to boil in a medium to high heat for 5 minutes so they will soften.
  10. With a deep ladle take the mix and put it into the blender. (Let the burner on but be careful)
  11. Spin it for 5 to 10 seconds.
  12. Pour the mix back to the pot you used before.
  13. Add the one teacup of sugar and start stirring gently so the sugar dissolves.
  14. Add the two tablespoons of lemon juice.
  15. Continue the cooking process for another 10 minutes or more. Just until the texture feels right to you.
  16. Let it cool and then place it in clean jars and keep it in the fridge.

Notes

This marmalade contains no preservatives; therefore, it should be consumed within a reasonable time and kept refrigerated at all times.
