Vegetables:

- 8 full tbsp of all purpose flour

- 1 or 2 eggs
- 2-3 pinches freshly grated nutmeg
- 1 cup finely grated kefalotyri cheese
- Salt
- Pepper
Instructions
The Sauce:
- Begin by browning the minced meat in olive oil over high heat.
- Add the chopped onion and garlic, allowing the onion to soften.
- Add the tomato paste and simmer until cooked.
- Add the brandy.
- Add the chopped tomato tomatoes, and spices.
- Let it shimmer for 5 to 10 minutes based on your desired aroma intensity.
- After 5 minutes, remove the bay leaf and the cinnamon stick
- Add salt and pepper, and gently simmer for 20 minutes until the liquid is absorbed.
- Remove from heat ans set aside.
The Vegetables:
- Slice the eggplants and the potatoes into approximately 0.5 cm thick slices.
- Place them on a dish, sprinkle with salt, and drizzle with olive oil.
- Take a frying pan and fry the eggplants in olive oil till they are soft and brown. When done place them on absorbent kitchen paper.
- Repeat the process with the potatoes.
- Set aside.
Bechamel:
- In a saucepan, melt the butter over medium heat. Ensure it melts evenly without browning.
- Once the butter is melted, sprinkle the flour evenly over it. Use a whisk to combine the flour and butter, creating a smooth paste known as a roux.
