Chef Roberto, your culinary journey has taken you through some of the most acclaimed kitchens in Italy. What key moments have shaped you into the professional you are today?
There are countless stories to tell, but I’d say that working alongside great chefs fills you with adrenaline and energy—enough to help you push through every challenge. It forges your determination, not just as a professional, but as a person.
Cinque Foglie is an intriguing name. Can you share the philosophy behind the restaurant and what sets it apart in today’s fine dining landscape?
The Cinque Foglie project represents a pristine place created in collaboration with the Adinolfi Family. The setting and the uniqueness of the ingredients—some of which are produced by them—intertwine with the culinary offering, delivering a sensory crescendo of flavors and expressing our passion for hospitality and the land where the restaurant is located.
Your cuisine is a balance of art and precision. How does a dish come to life in your mind—from the first spark of inspiration to the moment it reaches the table?
A dish begins with the raw ingredients—they tell the story and richness of the territory. Then comes the creative part, an ongoing dialogue between past and future. Finally, the balance of flavors brings the dish to life, making it both harmonious and enjoyable.
A Michelin Star is the dream of every chef devoted to excellence. How do you approach Michelin standards—innovation, consistency, and unforgettable dining experiences—at Cinque Foglie?
Receiving recognition like a Michelin Star is the result of hard work and a commitment to consistently delivering quality and experience. With my team, we stay focused, each bringing their own professionalism to the table. We work in complete synergy with the front-of-house staff to make guests feel at home and completely at ease.
Southern Italy boasts a culinary tradition that’s incredibly rich. How do you manage to modernize it without compromising its authenticity?
The secret lies in selecting the right raw ingredients and—most importantly—in respecting them. Often, it feels like the ingredient itself tells me how it wants to be served. It may sound odd, but that’s how it is.
Many of the world’s top chefs advocate for sustainability. How does Cinque Foglie incorporate local, seasonal, and sustainable ingredients to create dishes that are both delicious and earth-conscious?
The Adinolfi Family, my collaborators, practice organic farming. Most of our suppliers are local—we’re surrounded by Slow Food communities. We use renewable energy sources and are very mindful about reducing plastic use.
Beyond flavor, your dishes are true works of art. How important is visual presentation in your cuisine, and what role does it play in the overall dining experience?
Presentation is always important. A dish must be delicious and unforgettable, yes—but it must also be beautiful to look at.
A restaurant is more than just its food—it’s an experience. What emotions and sensations do you hope to evoke in your guests during a dinner at Cinque Foglie?
The goal is to move them emotionally—partly through surprise, and certainly by awakening memories.
The path to a Michelin Star demands dedication, evolution, and vision. In your view, what is the single most crucial element in achieving such a distinction?
Without a doubt: consistency and coherence in quality. That, and offering a truly personalized culinary experience.
If you could serve just one dish that fully represents your identity as a chef—one that could be worthy of a Michelin Star—what would it be, and why?
I would choose:
Scampi cooked in salt, snails with butter, almond and black garlic soup, and Mediterranean herb oil.
It’s a dish that speaks of the land, with innovation and technique.
You’ve worked in some of the most esteemed kitchens in Italy. Which lessons have impacted you the most, and how do they shape your leadership at Cinque Foglie?
Being a true leader today is no easy task. I earn my team’s trust by showing them I’m always present and ready to face any challenge alongside them.

Every professional experience I’ve had was chosen for a reason. Now, alongside the Adinolfi Family, we’re working together to create the ultimate fine dining experience.
Where the Land Speaks: The Magic of Battipaglia
Nestled in the heart of Battipaglia—a town famed for its buffalo mozzarella and agricultural richness—Cinque Foglie offers a dining experience deeply rooted in the local terroir. Interestingly, during a 1987 visit, U.S. President Ronald Reagan remarked, “If I had to live in one place for the rest of my life, it probably wouldn’t be Battipaglia. It sure is nice, though.” This blend of pastoral charm and culinary heritage makes it clear why Chef Allocca chose this location for his visionary restaurant.
