The Recipe

Ingredients:

Lemons: 1 kg
Water: 500 ml
Sugar: 200 gr

Preparation:

Start with the freshest lemons, preferably locally grown for an exquisite beverage with an authentic taste.

Regardless, wash the lemons thoroughly under running water, pat them dry with paper towels, peel them, and halve them.

When peeling, be careful not to remove the white part between the peel and the pulp, known as the albedo, which is notably bitter and could alter the final taste of your preparation.

Using a manual or electric juicer, extract the lemon juice and set it aside. If preferred, you can also strain the juice, keeping the pulp aside, which you can refrigerate and use for other preparations, such as flavoring sauces to accompany a good catch of fish or glazing a delicious lemon cake.

In a high-sided saucepan, combine the water, sugar, and thoroughly washed lemon peels, and boil over medium heat for 5 minutes.

Be sure to stir frequently with a spoon to completely dissolve the sugar.

Once the syrup is ready, set it aside and let it cool to room temperature.

Once the mixture has completely cooled, strain it through a fine-mesh sieve, transfer it to a sealed pitcher or bottles, and refrigerate.

Chill the beverage for at least 3 hours before serving and enjoy it well chilled.
